McCaull's Fresh Tomato Sauce Recipe
McCaull’s fresh tomato sauce for pasta
Ingredients:
4 plum tomatoes
1-2 cloves garlic, peeled and thinly sliced
approximately ¼ cup fresh basil, chopped
2 Tb olive oil
pinch salt
pepper (to taste)
½ tsp red pepper flakes (optional)
OR – a can of diced tomatoes in place of fresh tomatoes
pasta of your choice!
How to make this sauce:
Step 1.
Bring a large pot of salted water to boil.
Step 2.
Using a paring knife, make a small “x” on the bottom of each tomato
Step 3.
Drop one tomato into boiling water.
Remove after 10 seconds and place into cold water (or ice bath). Repeat with next three tomatoes.
Be sure to save boiling water to cook your pasta!
Step 4.
Once cool enough to touch, peel off skin of the tomatoes.
Step 5.
Slice each tomato in half and remove seeds.
Step 6.
Rough chop the tomatoes and place in bowl.
Step 7.
Peel and thinly slice garlic.
Step 8.
In a medium-sized pan, put approximately 2 Tb of olive oil over medium heat.
Step 9.
Once oil is hot, add garlic and cook for 1-2 minutes. Add chopped tomatoes.
Cook until simmering.
Add basil and seasonings to taste.
Cook up your pasta and enjoy your dinner
