1 cup Macaroni, cooked
1 cup grated cheese, cheddar (or your choice!)
2 Tbs butter
2 Tb All Purpose flour
1 ½ - 2 cups Half and Half (can use milk)
½ cup breadcrumbs
Precook macaroni in salted water.
To make the roux:
Melt butter in pan over med low heat. Add flour and whisk to be sure there are no balls of flour. Let mixture bubble for one minute (while stirring).
Stir Half and Half into the pan. – This is called a béchamel sauce. Add salt and pepper if desired.
Add grated cheese and continue to stir until melted.
Place macaroni in medium sized bowl and add melted cheese sauce. Stir to combine completely.
Place mixture into a baking dish and cover with breadcrumbs.
Bake at 350 degrees until crumbs are golden brown. (20 minutes or so).
